It's been a long time, my friends, but I was in the mood for some blogging during these last few hours of 2011.
I know I have my 101 in 1001, but I do have some new goals for 2012.
Fitness: Run a 10 miler (registered TODAY) and a half (probably Richmond again). DO NOT QUIT RUNNING OVER THE SUMMER.
Food: Try at least one new recipe a week.
Marriage: Less "eating out," more dates.
Health: Floss.
Spiritual: Read my Bible more often.
Intellectual: Read more books just for me. Blog at least once a week.
There we go. :-)
Mr. Discovery and I are going to have our Christmas morning tomorrow. We waited to get things on sale for each other since we bought a house. (Oh, I never told you that we bought a house, did I?)

Two-thirds!
We are two-thirds of the way through this year, already! That is SO hard to believe.
I spend the "summer" (who really considers September summer?) doing my own little challenge. It was called the Sans Soda Summer. I went three months without soda. This was one of my 101 in 1001, though according to the list, I was not required to make the three months consecutive, so I feel even cooler that I did make them consecutive. So... this was a good challenge. Most of the time, I didn't really feel the desire to have soda, but there were a few times when I could have really enjoyed a good ol' Boylan Black Cherry soda. I mean, I like soda, it's good, but I've never been "addicted" to it. Before I did this, I had a soda maybe every 10 days or so. I plan on keeping the habit up, but I will probably indulge in sodas like Boylan or Curiosity Cola, not Coke or Barq's.
So... the eats.

Ingredients:
Homemade Pizza
I used my normal pizza dough recipe, and then I added red and green peppers, onions, mozzarella and parmesan cheese, and some Jennie-O's Hot Italian Turkey Sausage that I removed from the casings and then cooked in my cast iron skillet.

In other news, I tried my first green monster. It looked gross (thus no photos), but tasted delicious.
The recipe I used:

Flank Steak Rollup, Clean Eating Magazine
Ingredients:
- Olive oil cooking spray
- 1/4 cups whole-wheat panko
- 1 tbsp pine nuts, toasted
- 2 tsp red wine vinegar
- 2 cloves garlic minced
- 1/4 tsp fine sea salt
- 1/4 tsp dried red pepper flakes
- 1 flank steak about a pound, trimmed of visible fat
- 3 oz spinach leaves
- kitchen string or skewers
- Preheat oven to 400 degrees. Arrange a rack in a baking dish and coat with cooking spray
- In a small bowl, combine panko, nuts, vinegar, garlic, salt, and pepper flakes. Set aside.
- Place steak on a work surface. Holding a sharp knife, parallel to the work surface and positioned along 1 of the longer sides, cut the steak almost in half horizontally so it opens like a book. Spread steak open with “spine of book” parallel to you.
- Sprinkle panko mixture over steak leaving a one inch border along the farthest edge. Arrange spinach on top. Beginning with the closest edge roll steak up, gently pressing down on the spinach. Tie up with kitchen string at 1-inch intervals. Place steak in prepared pan and bake unto the meat thermometer reads 150 for medium and 130 for rare. Remove from oven, transfer to a cutting board and cover loosely with foil to rest 10 mins.
- Remove foil and string and carefully cut steak crosswise into 1/2 inch slices. Serve drizzled with any juices that accumulated on the cutting board.

Chicken Parmesan Burgers, Elly Says Opa
Ingredients:
Burgers:
- 1 lb. ground chicken
- 1/4 cup grated parmesan cheese
- 1/4 cup plain bread crumbs
- 2 tsp. Italian seasoning
- 1/4 cup chopped flatleaf parsley
- 1 clove garlic, finely minced or pressed
- 1 shallot, finely diced
- salt and pepper
- 1/2 cup pasta sauce
- 4 slices mozzarella or provolone (or 1/2 cup shredded)
- sauteed mushrooms (optional)
- 4 buns (brushed with a little garlic butter, they are even better)
- Lightly mix together all the ingredients for the burgers. Form into 4 patties. I like to make them about 30-40 minutes ahead of time, to let the flavors meld a little bit.
- Preheat & spray the broiler with a little oil (or use the grill, or a pan). Broil the burgers for about 4 minutes on the first side, then flip and broil for 3 minutes. Top each chicken burger with 2 Tbsp. pasta sauce and a slice (or about 2T) of cheese. Place back under the broiler for 30-60 seconds, until cheese in melted and burger is cooked through. Top with mushrooms, if desired. Place the buns in the broiler for about 10 seconds, just until toasted.

- 2 tbsp peanut butter
- 1 tbsp honey
- 1/2 cup almond milk
- Two handfuls of spinach
- Ice to make smoothie of good consistency (10 for me)
I enjoyed it thoroughly! :-) Well, I think I am going to go off to the gym... time to get some running done. It's September and it's time to run!

Updates!
Okay, so I know that I have been absent for a while now, but I am alive. The first thing that I want to update is my 101 in 1001. No, I haven't forgotten about that!
2. Run a 10k Completed 3/27/10!
10. Take a Zumba class Check out the tagged posts on the side for that update!
14. Do a workout from Fit T.V. I have done a few of these now, and some are good, some are not. It's kind of hit and miss!
22. Go to the Farmer’s Market We went about a week ago. It was not the big one here in Richmond, it was the one near to our house. I did not buy anything because it was mostly very expensive.
30. Buy a DVD shelf Thanks Goodwill!
31. Buy a CD rack Thanks Goodwill!
32. Reorganize townhome cabinets Did this one last week- most of my appliances fit down there now... ugh- too many fun kitchen things and too little cabinet space!
33. Buy a fire extinguisher We needed one for the apt for our insurance, and I finally bought one!
51. Rotate photos in frames I did this several weeks ago... Feeling the need to do it again!
52. Make 3 pieces of jewelry I have made LOTS of jewelry. There's a post tagged on the sidebar, but I've made much more than that now!
74. Volunteer for something I went with our Youth Group to pack meals for Haiti. We packed 15,000 meals! It was great!
77. Buy a Kate Spade purse OR TWO! Hahahaa. I love the outlets! I got a lovely $355 purse for $55!!! Oh yeah!!! I also got a precious canvas tote that says "It's a beautiful day in the neighborhood" on the side. So cute!
92. See Wicked What a day! It was the day after my big race and I cried when those first notes sounded! Such an experience!
95. Go see a play A lot of our Youth Group kids are in a Christian Youth Theatre group here in town and we went to see them perform in The Jungle Book. They were awesome! We're going to see Peter Pan next month- it's gonna be awesome!

Let's see... what's new around here? We caught our mischevious mouse. That was not fun. At all. Luckily, DH cleaned up the mess!
Job prospects for the next school year are slim and subbing jobs are getting hard to snag with the end of the school year in sight (3 weeks for the county kids). I've been trying to clean up around the house in my spare time and I've also been re-watching Bones.
LOST ended. That was a big event in the past two weeks. I was pleased with the ending. DH was not. I did not expect the questions to be answered, so I was not frustrated. The one question I wanted answered in the finale was answered. I'll be cryptic so as not to ruin it for anyone out there. :-)
I did the first phase of P90X (almost perfectly exercise-wise), but I have lost my motivation and have taken this week off... Oops. I'd like to finish it, but I had no changes to my measurements in that first phase, so I'm a little discouraged.
That's about it for now. Y'all have a lovely day!

101 in 1001 Update!!
As of today, I have completed the following:
13. Buy running tights. After many, many frustrating hours of shopping for tights, I FINALLY found a pair at Target that I hope will please me. :-)
29. Buy a garlic press.
I don't know HOW I lived without one! SO convenient! In the background is smoked turkey kielbasa for Clean Eating Spaghetti Carbonara. :-)
44. Learn how to knit. No picture available of this as I left my 6 inches of knitting at my mother's house. :-)
62. Find a job. I am not employed with our county schools as a substitute teacher! It's going very well and pays extremely well!
71. Buy black boots.
I pretty much wear these every. Single. Day. Love. Love. Love.
81. Finish Reba on DVD.
79. Finish Arrested Development on DVD.
We had a snow day in today, so we marathoned on our remaning episodes of Reba and Arrested Development!
99. Go to an opera.
We went to see Figaro's Wedding (a "spin-off" of The Marriage of Figaro) at Liberty. FIL directs the opera workshop every year there.
Doin' pretty well on some of these tasks! :-) Anyone else snowed in today? We love our snow days. They are a great excuse to just sit in and not accomplish much. I did manage to throw a dinner together with little to no groceries. I forgot to pick up cream cheese for the enchilada lasagna, so I have all those things ready minus the cheese... You know... the most important part. Haha.

101 in 1001
101 in 1001
The Mission:
Complete 101 preset tasks in a period of 1001 days.
The Criteria:
Tasks must be specific (i.e. no ambiguity in the wording) with a result that is either measurable or clearly defined. Tasks must also be realistic and stretching (i.e. represent some amount of work on my part).
Why 1001 Days?
Many people have created lists in the past - frequently simple goals such as New Year's resolutions. The key to beating procrastination is to set a deadline that is realistic. 1001 Days (about 2.75 years) is a better period of time than a year, because it allows you several seasons to complete the tasks, which is better for organizing and timing some tasks such as overseas trips or outdoor activities.
Health and Fitness
